AUTUMN IN ITALY
Saturday, Oct. 14, noon to 2:30 p.m.
Keep warm as the weather turns cooler with easy Italian recipes made with favorite fall ingredients – pumpkin, pears, mushrooms and more! Students will be provided copies of every recipe. This class will introduce students to basic cooking techniques and teach useful tips. Menu:
– Crostini with apple, taleggio and walnuts – Pumpkin risotto
– Veal in marsala and mushrooms sauce
– Chestnut and mascarpone cream with amaretti cookies
EASY AND ELEGANT ITALIAN CUISINE
Friday, Dec. 8, 6-8:30 p.m.
Easy and elegant Italian dishes guaranteed to impress family and friends at your next holiday party. Students will be provided copies of every recipe. This class will introduce the student to basic cooking techniques and teach useful tips. Menu:
– Mussels in tomato and wine sauce
– Trofie fondue with wild mushrooms – Chicken saltimbocca with prosciutto
and sage
– Mini tart with pear and chocolate ganache
FRESH PASTA AT HOME
Friday, Nov. 3, 6-8:30 p.m.
Italians are world-famous for pasta, and
with good reason: Whether it’s light, ethereal egg noodles or hearty filled pastas, fresh pasta made the traditional Italian way rarely disappoints. In this class, we’ll learn to make two ideal pastas and pair each with their ideal sauce. This class will introduce the student to basic cooking techniques and teach very useful tips. Menu:
– Crostini with gorgonzola and caramelized onion
– Artichokes ravioli in butter mint sauce – Chocolate tagliatelle with speck and
walnut cream
– Raspberries trifle
